Chocolate: A Marvelous Natural Product of Chemistry

Nevertheless, most of us are completely unaware of the complex chemistry and technology involved in the production of a simple chocolate bar. Beginning chemistry students are rarely exposed to natural products and can benefit by becoming aware of the complexities of chemistry in nature. In an age when students frequently question the relevancy of their chemistry class, what could be more relevant than a study of chocolate?
